Kentucky Butter Cake

In lei of recent discussions, here's a simple vanilla pound cake that I think ya'll will love. It doesn't require much work, ingredient, nor frosting. Enjoy!






INSTRUCTIONS

Prep

1. Preheat oven to 350F,

2. Gather ingredients, a large bowl or standing mixer, a medium-size bowl, a 12-cup bundt pan (and something to grease it with), a small pot/sauce pan, and your necessary measuring utensils.

3. Grease pan, then set it aside.


Work

4. In the medium bowl, sift flour, baking powder, baking soda and salt; set aside.

5. In a mixer bowl fitted with the paddle attachment (or large bowl, and your good arm) , beat together butter, sugar, and oil on medium-high speed for 3-4 minutes until fluffy. Scrape down the sides and bottom of the bowl as necessary.

6. Add eggs, one at a time, then vanilla extract. Using a spatula, fold the flour mixture in 3 additions, alternating it with the buttermilk in 2 additions (starting and ending with the flour).

7. Scrape the batter into the prepared pan and smooth the top. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean. Remove from oven, and allow to cool in pan.

8. As the cake cools, prepare your butter sauce by adding all ingredient into a small pot over medium-low heat. Stir continuously until the butter is melted and the sugar is dissolved. Do not bring to a boil.

9. Poke holes all over the warm cake using a skewer, knife or anything but your finger, and pour the glaze evenly on the cake while still in the pan.

10. Allow the cake to cool completely before turning over onto your cooling rack, or serving plate.

...aaaaaaand finished! This baby is so perfectly sweet, all you'd really need is a little powdered sugar on top and a scoop of ice cream on the side (while it's still warm, of course).
