Garlic-Mango Meatloaf


Living in North Texas, where the weather's mood swings could give you whiplash, it's important to have a few full-proof comfort food recipes for those dreary days. This week, we're stocking up on them in our chapter, Stormy Weather.

Ingredients


For Meatloaf:

  • 4lbs of Ground Turkey (I always use 3 parts ground turkey to one part ground chicken, I'll explain below)

  • 3 cups breadcrumbs

  • 3/4 cup whole milk

  • 4 eggs

  • 2 tbs soy sauce

  • 1 whole green bell pepper, yellow pepper, yellow onion -chopped and sauteed in 1 tbs of olive oil

  • 3 tbs minced garlic

  • 1 tbs Italian Seasoning

  • 2 tsp garlic powder, onion powder

  • 1/2 tsp celery salt, garlic salt, ground ginger, black pepper, ground cloves, ground allspice

Details

Meat

Traditionally, a good meatloaf calls for a mixture of lean and fatty meats -i.e. ground beef and sausage. This is for sake of texture (and ...moisture...don't nobody want no dry ass brick). For this reason, I always use a really lean turkey mixed with ground chicken. If you don't want to go for the chicken, ensure that you grab a ground turkey option that isn't too lean.

Breadcrumbs

Don't be afraid to just buy some! Cooks and chefs work to intimidate folks with the illusion that you need to make every piece to the meal yourself. This isn't so. Though, I definitely made my own! For the amount necessary in this recipe, about 2 full french loaves will do. Simply leave them out to dry for a day to two, break them into pieces then toast in a low oven (200F) for a few hours. After that, it's nothing more than a trip to the food processor. If that doesn't float your boat, get them stale Saltines from the back of the pantry and repeat the last step mentioned. They'll work beautifully.

Also, many say that you should soak your breadcrumbs in milk prior to mixing all ingredient. This is really optional, especially since we'll allow our mixture to rest a bit prior to shaping and baking.

Wet and Dry ingredient

Puh-leeeeease note -your eggs, milk and soy sauce need be well combined before adding to the large bowl.


Clearly, the flow should go as such ==> Protein in the large bowl, add all listed ingredient starting with veggies and ending with liquids. Shape the loaf in your baking dish, and bake at 350F for 75 minutes, or until the loaf has reached an internal temp of 160F (the temp will rise once removed from the oven) and has browned.

 

For Glaze:

  • 1 can mango slices (or chunks) in heavy syrup

  • 2 cups frozen mango chunks pureed

  • 1 tbs garlic

  • 3 tsp balsamic vinegar

  • 1 heaping cup brown sugar, granulated sugar

  • 3 tbs honey

  • 1/4 cup unsalted butter

  • 1 tsp corn starch (mixed with enough cold water to make a thin paste)

Details

Simply throw it all into a pot, whisking every once in a while, as to break down the mango pieces, and let simmer.

 

For Potatoes:

  • 6 Russet potatoes (any any mashing potatoes of your choosing)

  • 1 tbs chives

  • 1/2 tsp garlic salt, garlic powder

  • 1/4 tsp white pepper

  • 1 oz goat cheese (crumbled preferred)

  • 1/2 tsp baking soda

  • Splash of whole milk

  • Salt and cracked pepper to taste

Details

If you don't know how to mash potatoes, you probably need more prayer than I'm giving you credit for. It's really simple, though! Just boil them suckers in enough water to cover them until they're soft -being careful not to boil too high, nor for too long or the potatoes will break down in the boiling pot and you end up with accidental potato soup-, mash them up, add your sprinkle of this and sprinkle of that, and you're virtually done.

It may seem unnecessary, but, as stated in the video, it's imperative in this recipe that we utilize goat cheese or some other sharply bitter additive. Sour cream in your potatoes could work as well.

If you elect to go this route, go with about 1/2 cup and be sure in increase the amount of baking soda used by a 1/4 for each additional 1/2 cup. Baking soda, especially when combined with a acidic component, causes a reaction which results in reeeeally fluffy, pillowy mounds of mashed potatoes. We'll discuss this in detail in a few weeks. 😜

 

For Onion Rings:

  • 1 large sweet yellow onion (good luck on slicing, because there's way I could teach you how🤣)

  • 2 large eggs

  • 1 cup whole milk

  • 1 tsp soy sauce

  • 1 cup all purpose flour

  • 1 tbs seasoning salt

  • 1/2 tsp black pepper, garlic powder

  • 2 cups Panko breadcrumbs

Details

This layer isn't necessary, but, again, for sake of the power of a single bit, you don't want to leave it out. This dish is layered on and for a purpose. The intent to experience all elements in one fork full. With that, you'd get crunchy, creamy, smooth, bitter, savory, sweet, salty.

The process is simple here too. Combine your ingredient in 3 different bowls -panko; flour, salt, pepper and garlic powder; eggs, milk and soy sauce -beaten, of course.

After slicing your onion and separating the layers, dip, baby dip. Here's the flow ==> Flour, egg wash, flour, egg wash, panko. Again, that means dipping one onion ring into the flour, then the egg wash, flour again, egg wash again, then panko breadcrumbs. After breading your onion rings, allow them to rest while you heat frying oil of your choice to medium-low temperature. Fry until golden.
